
Mizukoji in a shubo tank
Mizukoji is rice koji that is steeped in water, which helps to draw out the koji enzymes before mashing begins. If this water/koji mixture is in preparation for a
Sokujo-style yeast starter, lactic acid may also be added to mizukoji.
