Kojikin | 麹菌

Kojikin/Aspergillus Oryzae under a microscope.

Kojikin are the spores of the mold whose scientific name is Aspergillus Oryzae. These mold spores are propagated onto steamed sake rice grains to create Koji Rice (aka kojimai).
