Kanzamashi is sake that was heated, but then left to cool back down. This can be unintentional if, for example, you accidentally leave some left over warmed up sake sitting around too long, the sake will gradually lose it’s heat and return to room temperature. Sometimes this is done on purpose if drinkers like the effect that warming, and then cooling sake has on the taste.
