Haneki Shibori is a historical style of pressing used only by a handful of breweries today. This pressing method uses a long wooden arm that is used to press down like a lever on the sake mash in the fune press. The far end of the arm is weighted down with rocks hanging from ropes while the fulcrum end of the arm pushes down on the board that squeezes down the mash.
