Rich and quite sweet, and made with a unique fermentation starter method called “Bodaimoto” this is what I would call a ‘Time Capsule’ sake. Brewed in a sweet and rich style that would have pleased the samurai a few hundred years ago. Look for candied pear on the palate and a body and texture not unlike a cider or ice-wine. absolutely unique!
